Today is a momentous day at MoG HQ, because I get to announce my brand new VEGAN GINGERBREAD BUILDINGS - yay!
I’ve been working on perfecting my vegan gingerbread for a long time, as I’ve always wanted to be able to offer the same Willy Wonka-esque gingerbread experience to vegan customers as non-vegan customers. However, alongside the usual issues faced when creating vegan foodstuffs - that of ensuring the animal-free provenance of each ingredient, as well as all-important taste testing to make sure we’re not cutting corners on flavour - I also had to make sure that it was sturdy enough to use as construction gingerbread. (Flat vegan gingerbread biscuits are great, obviously, but I really wanted to create vegan gingerbread that could be used to make incredible and unbelievable sculptures too.)
By swapping butter for coconut oil, and by substituting our normal royal icing with egg-free alternatives, we’ve succeeded in making super strong, super delicious, super sturdy vegan gingerbread that we can build all of the things out of.
